The domaines fruit is harvested by hand, a rarity in Chablis, and rigorously sorted at the winery to ensure the highest quality. In recent times the amount of new oak used has been cut back and today the average age of the barrels in the cellar is five years. From the Petit Chablis to the domaines six Grand Cru wines, the quality is superb and the range from Domaine William Fevre is a benchmark for the wines of the region.

100% Chardonnay from 25 to 30 year old vines grown organically and planted on shallow clay-loam soils in the small town of Saint-P?re, facing South-East / South-West. Manual harvesting, sorting in the vineyard and pneumatic pressing of the whole bunches. Natural settling by gravity. Aged on the lees for 10 months. Bottled after a light filtration, just a micro-dose of sulphur.

Very pretty pale golden yellow in colour with light greenish glints. Bright, luminous and limpid. The nose is young, fresh and vivacious in a whirlwind of floral, fruity scents. The taste is lively, pleasant and perfumed, revealing lemon and verbena on a fine mineral background. We discover the pleasure of drinking for sheer enjoyment. The finish is pleasant leaving the mouth tingling with an airy freshness.
Elegance in the bottle, this silky red Burgundy is dense and vibrant; walking a fine tightrope of fresh acidity supporting the full body and impressive layers of flavour. It is made by the father-son winemaking team, Hubert and Laurent Lignier, who together manage nine hectares of vineyard land, from which they make 24 wines at regional, village, premier and grand cru level.
Their vineyards hae ploughed since the 1990s with no use of weedkillers and insecticides, which is, in their words "In order to favour microorganism and therefore the essential balance for the vine’s growth. Since 2011, we use organic protective treatments."
Excellent Chardonnay from the Puligny-Montrachet appellation in the C?te de Beaune. This is a crisp, dry wine. The nose shows notes of lemon and a subtle, chalky minerality. The palate is crisp, with a malic apple acidity.
Ch?teau de Puligny has benefited in recent years from the arrival of winemaker Etienne de Montille in 2001. Drastic lowering of yields and the reduction of oak has resulted in an increase in quality. Consequently, the wines of Ch?teau de Puligny exhibit great concentration and elegance.
