Four Pillars Rare Dry Gin is crafted to deliver the best of all worlds: a perfect, classic gin and also something that would fascinate and delight even the most hardened gin fanatic. It?s spicy but with great citrus, a truly modern Australian gin. Four Pillars Rare Dry Gin captures the essence of contemporary Australia?s heritage in Europe and Asia. We?re using whole oranges which is unusual but Australian citrus is highly aromatic and supports the spicier botanicals like cardamom.
The cinnamon and star anise add rich fruitcake tones, the Tasmanian pepperberry leaf provides warmth rather than heat, and the lemon myrtle is a beautiful alternative to lemon peel.
For this, "The Botanist", small-batch, artisanal Islay gin we use nine of the classic gin aromatics; orris root, cassia bark, coriander seed, etc and augment these with a heady harvest of 22 wild, native island botanicals, hand-picked by our expert foraging team from the windswept hills, peat bogs and Atlantic shores of this Hebridean island of Islay.
This truly seasonal and exotic cocktail is then slow "simmer" distilled in our unique and cherished Lomond pot-still, "ugly betty". Betty prefers to work at low-pressure and won't be rushed.
So our precious botanicals are slowly and gently coaxed into releasing their complex, signature aromatics. This was a unique project for our head distiller, Jim McEwan. Jim says he had to "learn a new dance" with Betty, and none of us knew what to expect from that first, achingly-slow 17 hour distillation. The result: a highly distinctive, complex, floral gin with outstanding finish and impeccable provenance.
In an age of re-badged industrial gins, the Botanist stands out as a truly artisanal, small-batch, hand-crafted labor of love and distiller's art. A breath of botanical Islay in every glass.

LOOKS: Bright. Crystalline.
SMELLS: Classic juniper, in an instant. Subtle floral hints of lavender & orange blossom follow close by. Deeper earthy tones of cinnamon bark & nutmeg arrive next, but be prepared for a fresh burst of multiple citrus to linger longer.
TASTES: Full frontal assault to the palate, a juniper & orange zest mixture. Closely followed by sweet lemon, taking over your entire palate. Minimum heat, minimum burn. Frontal palate flavours dominate, with small floral notes on the back palate. Jasmine and lavender, quite delicious.
FINISH: A warming numbness with continued juniper. Surprisingly long finish, coming back with waves of orange & mixed floral notes. Dry Gin, at its prime.

Four Pillars Spiced Negroni Gin is a highly aromatic, rich and (yes) spicy gin with great power and intensity. First, we took our base botanicals and upped the amount of Tasmanian pepperberry leaf and cinnamon. Then we added an exotic West African spice called Grains of Paradise. This is one of the most unusual spices in the world, with clove and sichuan characters. But although very powerful, the spice tends to glow rather than become hot.

Warner Edwards - We lovingly distil our gin in our beautiful copper still 'Curiosity' using pure spring water from our farm. Our Harrington Dry Gin is infused with fresh Elderflower petals handpicked from the hedgerows on our farm during its short flowering season. The end result is a smooth gin, with a hint of sweet and fragrant summer Elderflower.

Cadrona - The Source Gin is forged by the four seasons that blow through the Cardrona Valley, Southern Alps, New Zealand. A natural matrix of locally foraged rosehip, together with traditional juniper, coriander seed, angelica root, lemon and orange zest, vapour-distilled into our Single Malt Spirit. We refuse to chill-filter to deliver you full flavour and character. Because THE SOURCE is non-chill-filtered, you will notice the spirit clouds with dilution or when cold - a mark of distinction for this very rare and special drop.
Glendalough - To make this very special, small-batch Gin we completely rebalance our Wild Gin recipe and redistill it with extra fruit, flowers and spices... and of course a lot of fresh rose petals.
Three varieties of rose are used, the rare and elusive Wild Rose from the Wicklow mountains, large fragrant Heritage Roses, and the ancient prized Damask Rose all come together to make this a naturally pink and very floral gin.
Created in honor of Reefton Legend Little Biddy, a pipe-smoking, Gin-toting, 4-foot tall gold prospector. Our search for native botanicals takes us deep into the same West Coast rainforest where Biddy once fossicked for gold, to craft a uniquely New Zealand selection of small batch distilled gins with attitude.

IMAGINATION - Distilled in an 8 plate fractionating column still. Juniper and coriander are complemented by the leafy earthiness of manuka to create the heart of this gin. Whole New Zealand oranges and lemons add a refreshing citrus aroma and cinnamon and licorice leave a sweet lingering spice finish.
