Ten labels would not be sufficient. Protagoras, Socrates, Anaxagoras, and all the great figures of ancient Greece were orchestrated by Pericles, the city's architect par excellence. They created the perfect polis that inspired love from every corner of the known world, although it also provoked hate from some. May Zeus grant me the opportunity to take vengeance upon the Athenians! With these words, Darius ordered one of his servants to repeat the phrase "Master, remember Athens" three times during each banquet.
Here we present a blend of single malt and grain whiskies aged in sherry oak casks, originating from various city-states of Scotland and their distilleries. We have chosen the title "Architectus" to provoke those who dare to taste this blend, marked by impertinence and hubris. It is agile, simple, and clear, crafted by carefully selecting the finest elements. Upon nosing, it delivers a shocking aroma, fruity and delicate. On the palate, it offers a magnificent combination of flowers, sweet fruits, dried fruits, toasted nuts, cereals, and sweet spices. The fragrance of the Scottish fields gracefully merges with the mischievous sherry notes, creating a seamless and majestic experience that unfolds towards the southern horizon. Enhanced by a gentle summer glow, we find ourselves immersed in its captivating aroma as the sun slowly descends beyond the hills. Who knows how long it will take for such a remarkable alignment of eminent humans to occur again? It seems that even two thousand years have not been enough.

That tune, that song... often the emotions that find us out are too strong, the nostalgia sneaks up on us too quickly. You used to listen to that song with your folks… and now you aren’t with them, or they are simply not around anymore. Your memory feeds back sensations and feelings that the encaged present cannot capture; it is incapable of rationalising. But they occur, and they are the ones who will take your place, and in your honour that same melody, that same music, becomes a masterpiece of man’s ingenuity, capable of transcending the future and moving closer to those indescribable moments of infinity and eternity.
In the same way this blend was born with the precise intent of enabling those who are getting to know us what past we have been capable of bringing about and at the same time to remind those who know us well who we are now and that this is what we wish to be.
Listen: the backing track of an iconic Speyside distillery marries up perfectly with a great grain, arranging an aromatic bouquet worthy of a solo in the spotlight. A slow ouverture, but now bursts of ripe fruit, hay, lawn and petrichor. In the mouth majestic, warm and harmonious: we are back among the flavours of grandma’s kitchen: her sweet baking, her slightly, perfectly burnt mostaccioli biscuits.

Beauty is a gift. Is sensuality a quality? Chicago in the twenties (we are in the last century of course) awaits us. A time when all the world wanted to forget, perhaps too much.
Fresh and mature, savoury and sweet, lovable and hateful - the latter exclusively because it will come to an end, both in the glass and the bottle. Provoking, regal, flirty yet haughty. This is a very sensual sherry interpretation. A complete and exhilarating whisky entices us to fantasize, and imagine scenes from gangster films.
So let's ride on our 1928 T1, chasing tones and aromas Among the dominating ones we clearly spot confectioner's custard, cosmetics, oat, prairie herbs, leather and tar, all in a symphony. Nose and palate play a game of opposites, and chase each other like cops and robbers.

FROM DIFFERENT
ORIGINS BOTTLED IN SCOTLAND IN 2023
Any resemblance is purely coincidental, fourth edition. Sure, the Roman season our firm is living must have impacted on the choice of name in our latest rum assembly.
We decided we wanted a rum to explain our philosophy at all latitudes and in all battlefields. Hence the reference to imperial Rome, in a bottle allowing the best bartenders to make use of a curiously unusual ingredient. A rum to be drunk neat at first, and afterwards mixed, so as to be able to appreciate its depth, evolutions and possible variations. Beware: this rum will come to an end. Therefore, any recipe our spirit will become a main feature of cannot last forever. Oddly, this fills us with pride, because nothing should be eternal and nothing should be conceived to be repeated forever. Quality must end and be subject to change as it is informed by what occurs in our world each day. A nose and palate evoking a sense of Mare Nostrum, that Mediterranean surrounded by the Roman empire. A lengthy promenade from the gate to Asia and Cappadocia through the roads of Greece and the south of Italy to the lavender fields of Provence and further to the maquis of Andalusia. Dried figs, dates, linden honey, alcohol-pickled fruit, then fruits firmed up by sun and caramel, candied apricot, sweet spices, saffron… a long list of sugary associations. Equally opulent, balanced, fascinating, virile, generous, expressive, untiring to the mouth. We are surprised, conquered, convinced, attracted and then left alone only to be brought back to where we left off once more, without weakening or wearying – in fact with crisp vivacity,

This wine is a bouquet of summer memories; nashi pear, lemon blossom and elderflower cordial. The palate hints at sweet basil and thyme with citrus notes and a lingering dry finish.
Vineyard Sites
We have planted our Arneis on a stony section of the Gibson?s Creek vineyard, right in the centre of the Wairau river valley ? classic free draining silty, stony terroir hoping to give the wine its signature ?wet stone? minerality. The variety is moderately vigorous and needs careful tending, crop thinning, leaf pluck and trimming to maintain vine balance.
Vinification
The grapes were machine harvested in the cool of the morning, cold settled and cool fermented in stainless steel tanks prior to blending and finishing for bottling in spring.

Off-dry and simply delicious! Our pick for serious Riesling connoisseurs. The fruit character of the Southern Valleys is balanced by the minerality of the river gravels, all wrapped up in a dry, crisp acidity. 10+ years of aging potential if you have the self-control but drinking exceptionally well now.

Vineyards
- The McKenzie vineyard is located in Waipara close to the winery. The vineyard is a free draining terrace site. The average age of vines varies from 16 years or older.
Wine Making
- All hand harvested in late April and early May
- Harvest brix ranged from 22-23 brix [% sugar]
- Fermentation was in small vessels [1500L] 3 day cool soak, inoculated with yeast,
fermentation varies from 4-6 days peaking at 32 C then allowed 7-10 days on skins. Some components were given extended skin contact up to 28 days.
- Pressing was in traditional Basket Press
- Cooperage was a mixture of French barrels ranging in age from new to 6+ years. Duration is approx 18 months
- Malo lactic [ML] fermentation is natural starting in Spring and the wine is racked and has a SO2 addition once ML complete.
- Bottling is through 1 micron filter
