Four Pillars Olive Leaf Gin 700ml
After visiting Cobram Estate during olive harvest in 2019 Four Pillars realised olive oil could be a brilliant botanical alongside olive leaf.
“The aroma, flavour and texture of fresh olive is stunning, and we did an entire year of trials before finalising the recipe for this gin.
These trials landed us on our final mix of Olive Leaf Gin botanicals: a big base of juniper with a savoury overlay of coriander seed, rosemary and bay leaf from my backyard, olive leaf, olive oil, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit.”

The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, fresh lemon & fresh grapefruit. The result is a gin that is savoury, textural, bright and perfect for any Martini. But make sure to try it in a Gibson, Cam’s favourite.

Ingredients
60ml Four Pillars Olive Leaf Gin
10ml dry vermouth
10ml fino sherry
Cocktail onions
Method
Stir 60ml Four Pillars Olive Leaf Gin, 10ml dry vermouth and 10mL dry sherry over ice. Strain into a super cold glass and garnish with a couple of cocktail onions.
Serve with a side dish of Sicilian olives. Delish!
